Veganuary

The question is not Can they reason? nor Can they talk? but Can they suffer?

Choose kindness and compassion!

Mushroom Risotto

Ingredients:

1 Tbsp Olive Oil

1 Medium Onion (Chopped)

5 cups (480g) Cremini Mushrooms (Sliced)

1 Tbsp Crushed Garlic

1 and 1/2 cups (300g) Risotto Rice

6 cups Vegetable Stock

2 Tbsp Vegan Butter

Sea Salt (to taste)

Black Pepper (to taste)

Method:

Add olive oil to a pot with chopped onion and sauté on medium high for a couple of minutes until softened.

Add sliced mushrooms and garlic and toss with the onions.

Cover the pot and cook for a couple of minutes until the mushrooms have released some of their water.

Then remove the lid and add the risotto rice and sauté it with the onions, mushrooms and garlic.

Add 3 cups of vegetable stock, stir well, cover and simmer for around 20 minutes until the broth is mostly absorbed.

Add 1 and 1/2 cups vegetable stock, stir well again, cover and simmer for around 10 minutes until the broth is mostly absorbed.

Then add a final 1 and 1/2 cups of vegetable stock, stir well again, cover and simmer for a final 5-10 minutes.

It’s ready when all the stock has been mostly absorbed by the rice.

Turn off the heat and stir in 2 Tbsp of vegan butter.

Add sea salt and black pepper to taste.

red chilli 1, seeded and chopped

soy sauce 2 tbsp

Heat a frying pan with the sesame oil until very hot. Sear the tofu for about 2 minutes each side or until golden and crisp. Sprinkle with more sesame seeds or spring onions.

Depois do recheio estar cozinhado é so montar as camadas: pao, tofu, salsicha, fatias vegetais, pao, queijo.

Spicy BBQ tofu

Ingredients:

1 block extra-firm tofu

For the marinade:

1 tsp olive oil

3 or 4 tbsp light soy sauce

1 1/2 tbsp sriracha

1 tsp liquid smoke

1 tbsp BBQ sauce

Method:

Press the tofu to remove excess water

Make the marinade (mix all the marinade ingredientes)

Slice the tofu as desired

Combine tofu to the marinade

Spread the tofu evenly on parchment paper and bake (20 minutes, 200' fan)

Mid cooking you can flip each piece of tofu and drizzle more marinade over the tofu and continue to bake

Once the tofu is crispy on the outside, remove from the oven.

Vegan Steak
A receita original é deste SITE.

Ingredients:

For the Vegan Steaks:
3/4 cup (123g) Canned Chickpeas (Drained)
1/4 cup (15g) Nutritional Yeast
1 tsp Garlic Powder
1 tsp Onion Powder
1/4 tsp Cumin
1/4 tsp Coriander Powder
1/2 tsp Oregano
2 Tbsp Soy Sauce
1/2 cup (130g) Tomato Paste
1 tsp Paprika
1/4 tsp Black Pepper
1 Tbsp Dijon Mustard
1/4 tsp Liquid Smoke
1/2 cup (120ml) Vegetable Stock
1 and 3/4 cups (263g) Vital Wheat Gluten*

For the Marinade:
1/4 cup (60ml) Soy Sauce
1 tsp Paprika
2 Tbsp Brown Sugar
2 Tbsp Tomato Paste
1/8 tsp Liquid Smoke

For Frying:
1 Tbsp Olive Oil (or other oil)

Method:

1. Add the chickpeas, nutritional yeast, garlic powder, onion powder, cumin, coriander powder, oregano, soy sauce, tomato paste, paprika, black pepper, dijon mustard, liquid smoke and vegetable stock to the food processor and process until well mixed.
2. Transfer to a mixing bowl and add the vital wheat gluten. Stir in with a spoon briefly and then get in there with your hands, mixing it into a dough. Knead the dough for around 2 minutes, you want it to go from sticky and soft to firm and stretchy, so that when you pull it, it snaps back into place. See our full post for lots more info on kneading. Make sure you don’t over-knead it because that will cause your steaks to become very tough.
3. As soon as you have a firm, stretchy texture, flatten it out and cut it into 4 roughly equal sized steaks. Use a potato masher to bash the steaks down a bit to flatten, but don’t do this too much as it counts as kneading, and you don’t want to overdo it.
4. Wrap the steaks individually in tinfoil and then steam them for 20 minutes. Don’t wrap them too tight as they will expand while steaming. You can steam them in a steamer basket over a pot of boiling water, or in any steamer that you have.
5. While the steaks are steaming, prepare your marinade sauce by adding all the ingredients to a bowl and whisking them together. Let it sit for a little while and then whisk again. You want it to be nice and smooth and it can take a couple of minutes for the brown sugar to dissolve properly.
6. After steaming for 20 minutes, unwrap the steaks from their tinfoil and place into a square dish. Pour over the marinade sauce and use a brush to make sure the steaks are properly covered. Turn them over in the sauce a few times.
7. Heat a pan with a little olive oil (or other oil, 1 Tbsp is fine) and then fry the steaks (I found they all fitted into the same pan) flipping them regularly and brushing more marinade sauce on them every time you flip them, until they are nicely browned and caramelized.

receita vegana de Maio

A receita de Maio é do MP. "salmao" fumado, ou melhor, cenouras fumadas.

Smoked Carrots
A receita original é deste SITE.

Ingredientes:
2 carrots
1 tablespoons of liquid smoke or 1 teaspoon of smoked paprika
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 tablespoon soy sauce or coconut aminos
1 sheet nori paper, ripped into small shreds
1 cup water

Instructions:
1. Using the wide slot on a grater or a vegetable peeler, peel raw carrots until long strips.
2. Lightly team carrots in a pot on the stovetop, or in a microwave safe dish with a small amount of water. You can totally skip cooking as well if you'd like a raw vegan version!
3. Whisk soy sauce, smoked paprika, garlic powder, onion powder, water and nori sheet pieces together and place in an airtight container with carrot strips.
4. Place in the fridge and leave to marinate for at least 3 hours but ideally overnight for the most flavor.

Chickpea Curry

Ingredients:
1 onion, chopped
1 red pepper cut into strips
2 tbsp olive oil
1 tbsp curry powder
1/4 tsp crushed pepper
1tbsp cane sugar
4 tbsp nutritional yeast (B12 ihih)
1 tbsp tomato paste
1 can chickpeas drained and rinsed
1 can coconut milk
Salt to taste

Method:
Using a wok over medium-high heat sauté the onion and red pepper in the oil for 5 to 10 minutes
Add the curry powder, crushed red pepper, cane sugar, nutritional yeast, tomato paste and chickpeas and saute for about 3 minutes
Stir the coconut milk, add salt and continue to cook the mixture, stirring occasionally until thick and creamy (10 to 15 minutes)

Tofu with Onion

In a food container mix:
2 tbsp olive oil
1 tbsp mustard
3 tbsp soya sauce
1 tsp paprika
1/2 lemon juice
salt to taste

Slice the tofu

Transfer the tofu to the food container and season on both sides

Lightly oil a frying pan and transfer the tofu pieces. Cook them about 4-5 minutes on each side

Remove the tofu to a plate. On the same frying pan cook one onion sliced. Cook for a couple of minutes then pour the rest of the sauce used to season the tofu.

When done transfer the onion and place it on top of the tofu.

Servir com batata frita, salada ou arroz.

compras veganas

Compras do Lidl:

Compras do Sainsbury:

A saber:

comer vegan no Porto, Portugal

Arvore do Mundo - Porto
Espaco Compasso - Porto
Casa da Horta Associacao Cultural - Porto
Lupin Restaurante - Porto
Terra Viva - Espinho
